Made this for dinner a while back.  Made some carnitas like I usually do, but this time in a pressure cooker.  Basically brown some pork butt, add cumin, Anaheim chile powder, bay leaves, Mexican oregano, lemon zest, an onion, water to cover and salt to taste.  Braise until tender, I think it took 30 min in the pressure cooker, strain, and fry in a nonstick pan until crispy.  I made a homemade guacamole and smeared it on some tortillas, topped with the carnitas, some fat free sour cream, and drizzled some salsa de arbol and salsa verde.
