Korean Pork Chops (Daeji Galbi) with Prik Pao Asparagus and a Wasabi Miso Parsnip Puree.
Marinated some pork sirloin chops in marinade consisting of sambal oelek, shoyu, sesame oil, sesame seeds, garlic, ginger, palm sugar, salt, and white pepper for a day and grilled. Boiled some peeled, cubed parsnips until tender and pureed with a stick blender until smooth, folded in some wasabi paste, some awase miso, salt, and white pepper. Blanched some asparagus and sauteed in a prik pao sauce (spicy tamarind and fish paste sauce) with some sesame oil and nuoc mam.
