Baingan Bartha. Fire roasted eggplant seasoned with onions, cumin, coriander, ginger, garlic, turmeric, methi, hing, tomatoes, and coriander leaves (cilantro). Served with TJ’s garlic naan and basic basmati pulao seasoned with cardamom, cumin, bay, pepper, coriander, and butter.
My second time cooking eggplant, can’t believe I said I didn’t like it the whole time I was growing up. This stuff is delicious.
